Gin’s origins trace back to 16th-century Holland, where a medicinal spirit called jenever was created by distilling malt wine with juniper berries and other botanicals. Originally used to treat ailments like kidney disorders, it was embraced by Dutch soldiers during wartime for its calming effects giving rise to the term “Dutch courage.”

When English soldiers encountered jenever during the Eighty Years’ War, they brought the idea back home, where it evolved into what we now recognize as gin. By the 18th century, gin had exploded in popularity across England, particularly among the working class during what became known as the Gin Craze.

From a rough spirit associated with excess, gin transformed into a sophisticated base for classic cocktails like the Martini and Negroni—cementing its place as a staple of modern mixology.

Gin’s journey didn’t end in Europe it became a cultural icon in America too.

During Prohibition in the 1920s, when alcohol was banned across the U.S., gin became the spirit of choice for underground distillers. It was cheap, fast to make, and could be flavored with whatever botanicals were on hand.

This era gave birth to the infamous “bathtub gin,” a rough, homemade version of the spirit that fueled speakeasies and jazz clubs alike. Despite its sketchy origins, it helped embed gin into American cocktail culture, inspiring classics like the Bee’s Knees and the Gin Rickey.

Beyond the bar, gin has also seeped into American music and pop culture, most famously in the song “Bathtub Gin” by jam band Phish. The track, often improvised live, pays playful homage to the spirit and the mystique of its Prohibition roots.

IMMORAL Gin Gulf Gimlet
Ingredients:

  • 2 oz IMMORAL Gin

  • ¾ oz basil & lime muddle

  • ¼ oz celery bitters

  • Fresh basil garnish

  • Cucumber slice garnish

Method: Muddle basil and lime juice. Shake with ice and fine strain into a coupe. Garnish with slapped basil and cucumber
